This recipe was shared with me after my sister stayed at the Mirabelle Bed and Breakfast in Wooster, Ohio. The innkeepers there were kind enough to share the recipe with me, and our guests have been enjoying them ever since!
INGREDIENTS
2 tablespoons maple syrup
2 tablespoons butter
8 slices white bread with crusts removed
8 eggs
salt and pepper to taste |
COOKING INSTRUCTIONS
Preheat oven to 400 degrees. Combine syrup and butter in microwavable dish and cook until butter is melted. Press out bread with rolling pin. Brush each slice with the syrup mixture and press down into greased muffin cups. (The dry side should be up in the muffin cup.) Break one egg into each muffin cup and sprinkle with salt and pepper to taste. Bake 15 minutes. Yields 4 servings. |
Note:
Before attempting to remove the baked eggs, take a knife and separate the bread from the muffin cups. Then, pull out with two forks. |
